UMF stands for Unique Manuka Factor, an official authority in NZ that regulates real manuka honey.
As 90% of manuka honey sold worldwide is fake, NZ is clamping down hard on manuka brand, please insist on UMF logo manuka honey.

For UMF, the higher the number, the higher the manuka activity methylglyoxal in it. As a rough guide

UMF 5 - light, buy only for trial and test
UMF 10 - moderate, this is the recommended level for daily health maintenance to improve immune system and health.
UMF 12 - Slightly higher value for daily consumption too
UMF 15 - higher potency, recommended only if you have bad digestive problems, or very poor health or poor immune system.

Generally I would usually recommend UMF 10+ for daily living.
